      <image:caption>Ingredients • 1 head of romaine (cos) lettuce • 1 bunch of asparagus • 5 snow peas • 1/3 cup frozen peas • 3 Brussel sprouts • handful string beans • 1 baby cucumber • ½ block of Greek feta • lemon wedges • small handful of slivered almonds Dressing • 1 tablespoon Dijon mustard • 2 tablespoons extra-virgin olive oil • 1 tablespoon honey • 2 tablespoons apple cider vinegar (or lemon juice) • Salt and pepper Method The first thing you need to do is blanch your vegetables. To do this, have your water boiling, then add your vegetables one variety at a time, scooping them out when they have finished cooking. Each of these vegetables will generally take only 1 minute to cook, but if you aren’t sure, watch for them to turn a vibrant shade of green then you know they are ready. I always rinse them under cold water to stop them from overcooking and going soggy. You only need to blanch the Brussel sprouts (leave whole to blanch, then cut in halves or quarters to serve), string beans, frozen peas, and the asparagus (just make sure you snap off the woody end of the spear before blanching). The rest of the vegetables can be served raw. To make the dressing, whisk everything together until it goes a nice creamy colour. Dress your vegetables with the honey mustard dressing, sprinkle with feta and almonds and serve with lemon wedges.</image:caption>

At 75, Marilyn is still competing in triathlons and after making and eating this salad, I’m beginning to see how she is still doing this. The salad is truly a hug for your insides. It’s packed full of goodness, celebrates vegetables like you wouldn’t believe, and will send your mouth into an excited overdrive with all the different textures, crunches, and flavours. Marilyn said the best thing about this salad is that you can use whatever vegetable you can find or if you don’t like something, then simply leave it out. While this salad doesn’t guarantee you will be able to compete in triathlons well into your 70’s, it does guarantee you will have a spring in your step for about a month after eating it.</image:caption>

      <image:caption>Ingredients 4 eggs separated – room temp Pinch salt ¾ cup caster sugar ¾ cup cornflower  Tablespoon custard powder 1 teaspoon pure vanilla essence 1 teaspoon cream of tartar 1 teaspoon bicarbonate of soda Method Preheat oven to 175 degrees Grease or line two 20cm cake tins Beat egg whites and salt till soft peaks form, then gradually beat in cast sugar. Beat well until very thick stiff peaks form. Gently fold in the egg yolks and vanilla. Add twice sifted dry ingredients, then gently fold them through the egg mixture till combined. Pour evenly into prepared tins. Bake 20-30 minutes. Turn out on wire rack to cool. Fill with cream and jam. Ice or decorate the top of the sponge as desired or dust with icing sugar. For a chocolate sponge add 2 tbs cocoa powder.</image:caption>

      <image:caption>I wouldn’t say that I’ve been avoiding making sponge cakes, but I will say that everyone I have ever spoken to, says they are near impossible to master. With this in mind, you won’t be surprised to hear that the cake pictured, was my 3rd attempt. The first cake sank and formed a meringue like crater, the second cake crumbled like it was made from slightly wet sand and the third cake, this beauty, while only slightly better than the cakes before it, held together. Just. I am happy to be beaten by this sponge cake recipe because it shows just how talented Joan was. The fact that she could bang out 6 of these and not break a sweat is testament to how amazingly talented she was. Whether it be her mixing technique, the love she put into them or the cake gods watching over her, she nailed them. And she was known for it.</image:caption>

When making it, I soon realised that the aim was to whip as much air into it as possible. So, with great gusto, I did. And it was well worth it.  The recipe belongs to Edna. And I'm told that she is famous for it (certainly something to be proud of being famous for!). The cake is light and airy and feels like you’re eating a cloud and I can certainly understand why it is a family favourite.       <image:caption>There aren’t too many people these days who don’t know about Pho, but for those in the back, it is arguably Vietnam’s most famous dish. It boasts the ever so comforting flavours of Southeast Asia. I’m talking fragrant herbs, lemon, fish sauce, chilli and a clear broth that makes you feel both healthy and reassured. To make a beef Pho, or Pho Bo, it is usually a two-day process which even on a good day seems a little laborious. But this recipe, with succulent mouth-watering chicken, is so much easier and somehow packs just as much flavour, if not more.</image:caption>

      <image:caption>Ingredients 1 whole chicken 1 knob of ginger 1 peeled onion 1 tbsp chicken stock flavour 1 tbsp fish sauce 1 tbsp of salt 100g rock sugar 2 star anise 3 coriander roots 3 shallots Pho noodles Garnish: Coriander Basil leaves Bean sprouts (raw or cooked optional) Hoisin sauce Sriracha and fresh chilli Method Place the chicken in a large pot of water (about 4 L or so). Add salt, rock sugar and chicken stock flavour. As you bring it to the boil, skim off the foam to get a clear broth colour. Add one peeled onion and knob of ginger Keep on medium heat once it comes to a boil and cook for another 30-45 mins Char the ginger, shallots, coriander roots and star anise directly on the stove (this brings out the flavour of the broth!). Scrape off the burnt bits and place them into teabags to add to the broth. Add fish sauce then taste test and add more salt/sugar as needed to suit your taste. Take the chicken out of the pot and cut into smaller pieces to serve. In a medium bowl add pho noodles, chicken and broth. Garnish with bean sprouts, basil leaves and coriander. Don’t forget the chilli, hoisin sauce and sriracha!</image:caption>

      <image:caption>Ingredients 1 brown onion 3 cloves of garlic 4 cups of vegetable stock (could potentially need more depending on how long the lentils take to cook) 2 cups of dry green lentils  Crispy sour dough bread (for serving) Method In a large saucepan over medium heat cook onions slowly, about 8 minutes. When the onion is soft add the garlic and cook until fragrant, 1 minute.  Reduce heat to low, add the vegetable stock and the lentils. Cover the pot and simmer until tender, 35 minutes (this could vary, so you'll need to taste the lentils to make sure they're properly cooked and not grainy).  When lentils are cooked, transfer 2 cups of the mixture into a blender and blend it until it's smooth. Stir the puree back into the soup and season with salt and pepper.  Serve with some slices of crispy sourdough bread.</image:caption>

      <image:caption>Ingredients 2 eggs 3 mashed dirty potatoes 500gm Plain Flour Pinch salt 1 cup tepid water Method Place flour on a clean surface and add salt. Make a well in the centre and add cracked eggs and tepid water. Mix moist ingredients together. Mix through potato and knead thoroughly. Take small amounts of kneaded pastry and roll out to a fair thickness. Cut strips of pastry about 10-12" long then cut the lengths into inch pieces and place on gnocchi cutter and roll downwards. This will give you a very effective pattern. Or you can place pastry on a fork to give you a similar pattern. If not just leave small pastry bits as a whole and this will still work. Cook in a pot of boiling water add salt and two drops of oil so the pasta won't stick. Cook gently for about 5 mins or al dente. Serve with a Bolognaise or a Pesto sauce. Top with a tasty Italian cheese preferably pecorino or a nice parmesan cheese. If health-conscious can substitute 500gm of Ricotta instead of potato. Enjoy!!</image:caption>

      <image:caption>Ingredients 1 can Heinz Big Red tomato soup (don’t even think about using another brand) Spaghetti pasta (however much you think is 1 serve - so, a lot!) Tasty cheese (hand grated, as Nan would). Method Cook the pasta until soft (Nan used to do this in the microwave). Once cooked, transfer pasta to the bowl you are serving it in and pour the tomato soup over, ensuring all pasta is covered in the thick, blood-red soup. Grate cheese on top ensuring no man is left uncovered then stir to melt the cheese. Viola! All of your problems have disappeared.</image:caption>

This came about from spending so much time with her grandkids that we simply had no choice but to call her Ma. As 5 or 6-year-olds, if you hear your best friends calling someone ‘Ma’, chances are you're going to call them the same. Fast forward a couple of decades and we are still calling her that.       <image:caption>This recipe pays homage to my paternal grandmother. Her name was Iris Dorothy Lewis. If there was ever a lady who was the quintessential English Lady, it was her. She never swore, she never got flustered and she would always wear silk nighties to bed. She really was a Lady.  She had a way of making every day phrases seem like poetry. She would refer to red-bellied black snakes as ‘snakes with the red undercarriage’ and dresses weren’t dresses, they were ‘frocks’. When she recalled the antics of what her three boys used to get up to, she would laugh so hard, tears would stream down her face as she tried to get through the sentence. She was strong, she was independent, and she was beautiful. Growing up I remember she always had a rectangle tin in the fridge filled with one of her homemade slices. I never ate them (if you have read my bio then you will understand why), but before she passed away, I asked her to give me her favourite slice recipe. And here it is…</image:caption>

      <image:caption>4 cups of sugar (white) 4 cups of water  40-50 grams of instant coffee  1 bottle of Vodka  1 tablespoon of vanilla essence  (natural vanilla extract) Method Bring sugar and water to the boil (stirring until the sugar has dissolved) Simmer for 5 minutes  Add coffee (stirring) boil for one minute  Leave to cool  Add vodka and vanilla  Makes 3 bottles and a little.
